From Tree to Table: How Pure Maple Syrup is Made

When you pour pure maple syrup over pancakes or stir it into your coffee, it’s easy to forget just how much work nature (and people) put into getting it there.

Unlike artificial syrups, every bottle of St. Lawrence Gold pure maple syrup is a single-ingredient product that comes directly from maple trees. Here’s how it travels from the forest to your table.

Tapping the Trees

Each spring, when the nights are still frosty but the days start to warm, maple trees are tapped. A small spout is inserted into the trunk, allowing sap to flow out.

Harvesting sap does not damage the tree, and the same trees can be tapped year after year for generations. This is what makes pure maple syrup one of the most sustainable sweeteners on the planet.

Collecting the sap

The sap itself is clear and watery, with only a subtle sweetness.

It takes about 40 litres of sap to make a single litre of syrup. In traditional sugaring camps, buckets were hung under the spouts, but today many producers use a network of food-safe tubing that carries the sap directly to a central collection point.

Boiling and Evaporation

This is where the magic happens. The sap is boiled to evaporate the excess water, leaving behind the concentrated sweetness and complex flavour of maple. Depending on how long it is boiled, and when in the season it is collected, the syrup will range in colour and taste, from light and delicate to dark and robust.

Maple syrup grades

Grading the syrup

Pure maple syrup is graded by colour and flavour.

First Tapped is smooth and delicate, Amber is rich and well-balanced, Dark has bold caramel depth, and Late Harvest is intensely toffee-like.

St. Lawrence Gold offers them all, so you can choose the perfect syrup for your recipe.

Bottling Pure Maple Syrup

Once the boiling is complete and the syrup reaches the correct density, it is filtered and bottled. Nothing is added, nothing is taken away.

What you get in a bottle of St. Lawrence Gold Maple Syrup is simply the essence of the maple tree, captured at its peak.

From Forest to Kitchen

That is the journey of pure maple syrup, from tree to table. It is a process rooted in tradition, carefully refined with modern methods, and always in partnership with nature. Every drop carries the flavour of the forest and the work of skilled producers who protect it.
