Maple syrup FAQs

You know it tastes amazing, but how much do you really know about maple syrup? We’ve rounded up the most-asked questions to give you the sweet facts about nature’s favourite syrup.

What is pure maple syrup?

It’s the boiled-down sap of maple trees… nothing else. No additives, no colouring, no weird stuff. Just pure, golden goodness straight from nature.

How is maple syrup made?

In spring, sap is collected from maple trees and gently boiled until it transforms into syrup. It takes about 40 litres of sap to make just 1 litre of syrup; no wonder it’s so precious.

When is maple syrup season?

Only a few weeks each year, usually from mid-February to April, when freezing nights and warmer days get the sap flowing.

What do the grades mean?

All real maple syrup is Grade A – but the colour and flavour change through the season.

  • Golden – light and delicate
  • Amber – rich and smooth
  • Dark – bold and caramel-like
  • Very Dark – strong and intense

How should I store maple syrup?

Unopened, it’s fine in the cupboard. Once opened, keep it in the fridge or even the freezer if you want it to last for ages (it won’t freeze solid).

What does maple syrup naturally contain?
Maple syrup offers more than sweetness. Made from the sap of maple trees, it naturally contains a range of plant compounds and minerals, giving it a distinctive point of difference from refined sugar syrups.

What’s the difference between maple syrup and honey?
They’re both natural sweeteners, but they come from very different sources and have their own distinctive flavours. Maple syrup is made from the sap of maple trees and has a smooth, caramel-like flavour that works brilliantly in both sweet and savoury dishes. Honey is produced by bees from flower nectar and its flavour varies depending on the flowers it comes from. Which you choose really comes down to the flavour and recipe you’re looking for.

What’s the difference between maple syrup and refined sugar?
Maple syrup is made from the sap of maple trees and naturally contains a range of plant compounds and minerals, giving it a distinctive point of difference from refined sugar. It also brings its own rich, distinctive flavour rather than sweetness alone.

What is so special about maple syrup?

It’s one of the only foods in the world tapped directly from trees. The season is short, the process is natural, and the flavour is like nothing else; rich, complex, and unique to the region and time of harvest. That’s why chefs love it, foodies rave about it, and why once you taste the real stuff, there’s no going back.

What’s the difference between maple syrup and pancake syrup?

Pure maple syrup is made from maple tree sap, while many pancake syrups are made using glucose or corn syrups with added flavours. Pure maple syrup has its own naturally distinctive maple flavour.

Is maple syrup vegan and gluten-free?

Absolutely! 100% pure maple syrup contains nothing but maple sap.

Why does maple syrup cost more than pancake syrup?

Because it’s a rare, seasonal product that takes a lot of sap, time, and care to make, and the flavour is worth every drop.
